Cinnamon Rolls Grain Free


Ohhhh my goodnesss. Wow. I have played with the ingredients on these little suckers a few times and this has got to be the yummiest treat. Moist, soft, buttery, deeeelish!

To boot, this is a one bowl mess!!

Please see my recipe notes below to make sure you do the steps just right.

These guys even pull apart in layers! They are almost sinful. Moist, chewy, perfection. A Cinnamon Roll that makes you forget about gluten! I promise you will not want to share these.

I kept the icing simple and not too sweet. I think it ends up tasting better. Feel free to adjust the icing to your liking.

Grain Free Cinnamon Rolls

  • 1 + 3/4 cup Blanched FINE almond flour
  • 1/4 cup Coconut flour
  • 4 tablespoons Butter (MUST be room temp.-NOT melted don't skip this step)
  • 1/4 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 2 Organic large eggs
  • 2 tablespoons Honey (Divided)
  • 1 tablespoon Cinnamon


  • 2-4 tablespoons Honey (As sweet as you like)
  • 1/4 cup Coconut milk canned full fat (Cold - scrape cream off top)
  • 2 tablespoons Coconut Cream/Manna (Melted)


If you need to use Coconut oil to be dairy free, use the Coconut oil when it is hard. Try to keep it some where that it won't melt while you do this process.


1. In a bowl add all flour, baking soda and salt, mix to combine.
2. Add eggs and honey to the flour mix and incorporate well.
3. Add the butter and "smash" it into the batter well. You should end up with a dough ball- not loose batter.
Spray two pieces of parchment with non stick spray and put the ball of dough in between. Press to flatten into somewhat of a rectangle, about 1/4 inch thick.
5. Remove the top piece of parchment and sprinkle the cinnamon over the dough to cover.
6. Drizzle the honey over the cinnamon.
Grab one end of the parchment and start to roll the dough, using the parchment as a guide and to help repair any cracks. Shape the roll into a log and thin it out as you roll.
Once rolled, spray a knife with non stick spray and cut 1.5 inch segments and place on a greased sheet of parchment.
9. Bake at 350 degrees for 10-20 minutes. Just watch them!
10. Melt Coconut Cream and mix honey in. Scrape cream off the top of chilled coconut milk and mix with honey mixture. Let rolls cool a bit and drizzle over!

    I made these with sunflower seed flour instead of almond. These are so good and easy! I also used maple syrup in the frosting instead of honey, but I’m sure honey tastes just as good. Thank you for the recipe! I’m getting ready to make another batch. πŸ™‚

    What if you don’t use non-stick spray and have nothing like it in the house? I greased my parchment paper w/ butter, but it was way too sticky. I didn’t even think of trying to cut them into rolls and so am baking a cinnamon log (which I’m still excited about). I know it will be delicious, but how can I get the flour to be firmer for rolling?

      The butter HAS to be firm. Don’t do the rolling and cutting by the oven where it is warm or it will soften the butter. Next time, place the roll in the fridge for a minute, let the butter firm up and then take it out and cut.

    This is the first grain free, sugar free… basically ‘healthy’ dessert I’ve made. I recently made the transition to gluten free, sugar free and other things for health reasons.

    Also, I added unsweeted chocolate shaving to the icing… totally worth it. =)

I am also new to the scd diet and was a little bummed about the dessert situation at first too, however, I just polished off an scd coffeehouse lemon loaf that was amazing.     Wow! These look fantastic. Is there any way to make these sans coconut flour though? It is extremely hard to get in my area and for high prices. Could you just up the almond flour?

    These look great and I am ready to try them…I have one suggestion for your readers…instead of using a knife to cut the rolls, if you will slip a long piece of dental floss under the roll and cross the end pieces across the roll and pull, the rolls cut easily…just a suggestion..thanks so much for sharing!

    I am making this now and already it smells amazingď Quick question though, I noticed you put to add honey to the dough as well as drizzle over the cinnamon, but only had 1 tablespoon in the recipe. Honestly, I did both! Im sure it will taste great, I just didn\\’t know if you were meaning for one or the other. Btw, this is my FIRST grain-free bread-like product! Cheers! πŸ™‚
